easy andies mint cookies

i am a sucker  for anything chocolate and mint. no wonder that andies mint cookies are one of my most favorites (followed by cutlers mint brownie cookies but i have yet to make those on my own). these are seriously so easy to make and oh so yummy. i can't stop with just one. 

easy andies mint cookies 
this will make about 24-30 cookies depending on size 

what you'll need:
1 devils food cake mix (any brand will do)
2 eggs
1/2 cup of oil
1 package of andies mints 

how to make them:
mix your cake mix, oil and eggs together. the mixture will be think and sticky. drop a good sized ball of dough onto a lined cookie sheet. i started off using my cookie spoon but decided the size was too big. i just eyeballed the rest. 

bake cookies at 350 for 7-9 mins. you don't want to over cook these. as soon as you take the cookies out of the oven put one andies mint on each cookie while they are still hot. leave them for about 5 mins. once the mint has melted a bit take a knife or the back of a spoon and swirl the mint like frosting. trick: while the cookies are baking unwrap your andies mints so they are ready to put on while the cookie is still hot.

some people like them warm and gooey but i prefer them cool. i love when the chocolate on top hardens a bit. the cookies stay soft with a hard chocolate top. even spence's med school group loved this little guys.

  1. They look good, the part that scares me is you can't stop with just one. My husband isn't into sweets so whenever I bake I pretty much eat it all.
